Plans for Massachusetts expansion continues after Baja’s restaurant announces death of founder

A local man who started a local chain of restaurants has died.

57-year-old David Boutros of South Kingstown, RI, the owner of Baja restaurants in Rhode Island, Connecticut, and Massachusetts passed away Saturday after a lengthy battle with a terminal illness.

Baja’s restaurant issued a statement Tuesday afternoon marking David’s hard work and dedication which helped him grow his restaurant business from one location to over 16 successful spots:

“Even with challenges along the way, David’s passion and determination never faltered. His focus on great food and customer service earned him a loyal following at each Baja location. 

“David’s dream of opening 20 restaurants wasn’t just a goal-it was a symbol of his belief in hard work and dedication. Even after his passing, David’s legacy lives on through the success of his restaurants. 

“In his memory, David’s family and team are determined to continue his dream of reaching 20 Baja locations. They are working together to carry on his vision with the same passion he had. 

“David’s story shows the power of passion and perseverance. His legacy will continue to inspire those who dare to dream big and work hard. 

“Let us remember David for his entrepreneurial spirit, kindness, and joy. His memory will always be cherished, and his legacy will live on through the businesses he built with love and dedication. “

One of those expansion locations was announced earlier this year, 899 G.A.R. Highway (Route 6) in Somerset, the former Trump Store location. An opening date has not been released.

All Baja locations will be closed on October 3rd to honor Boutros’ memory.

Baja’s specializes in authentic Mexican food including tacos, burritos, enchiladas, chimichangas, and quesadillas. They also feature chicken wings, desserts, subs, salads, and wraps.

Boutros’ Mass of Christian Burial to which relatives and friends are invited, will be held on Friday, October 4th at 11 a.m. in St. George Maronite Catholic Church, 1493 Cranston St., Cranston, RI, followed by entombment in Sts. Peter & Paul Mausoleum at St. Ann Cemetery, Cranston.

Visiting hours will be held at the NARDOLILLO FUNERAL HOME & Crematory, 1278 Park Ave., Cranston on Thursday, from 4 p.m. to 8 p.m.
